EASY BEET SALAD RECIPE | ENSALADA DE VETERABA FACIL

Hi guys, I have been a little MIA around here because as you know (if you follow Snapchat and Instagram) I was in Miami for Hispanicize. But I am back and ready with a few posts and videos coming your way very soon. For now I wanted to share this easy and absolutely delicious beet salad that I love to make. It's simple and so so good. Servings: 3-4 people

INGREDIENTS:

1 can of sliced beets
3 potatoes 
5 grape tomatoes
1 small red onion
1 small white onion
a bunch of cilantro
olive oil to taste
1 lemon
1/2 tsp of salt
2 tbs of mayonnaise

Dice the beets. After peeling the potatoes, dice and boil.
Once the potatoes and beets are ready, mix them together in a bowl, add mayonnaise. 

Salsa de Cebolla:
Cut up the tomatoes, onions and cilantro. Mix these ingredients in a small bowl. Add olive oil to taste and make sure it's juice enough. Then squeeze 1 whole lemon. Add salt.

Serve salsa over the beets and potato mix. You may serve with chicken or steak, whatever your choice it. It's nice to serve with avocado or sweet plantains, as an option too.
